酸辣豆腐羹


原料：豆腐、金針菇、黑木耳、胡蘿蔔、紅尖椒、香菜

做法：
１、豆腐切條狀，金針菇切根後洗淨切段，黑木耳、紅尖椒分別洗淨切絲，胡蘿蔔去皮後洗淨切絲，香菜切末備用。

２、起鍋熱油，先把金針菇、木耳絲、胡蘿蔔絲、辣椒絲放入炒香，再倒入適量的水，用大火煮滾後，再轉為中火，待材料煮熟時，放入豆腐，並加鹽、糖及胡椒粉調味，最後加入香菜末。

３、待再次煮滾後，勾簿欠，再加入白醋，並滴入香油，即可盛出。

提醒：
１、白醋要勾芡後再加入，因為醋煮久了會有苦味。

２、此羹有辣味是因為放了胡椒粉，所以要根據個人喜好掌握胡椒粉的量。
